The variety Good Yellow is a classic, old variety for use in the kitchen. It is characterized by larger tubers and a mild taste.

Jerusalem artichoke (Helianthus tuberosus) is related to the sunflower. The plant was in the 17th century. discovered in North America by an Indian tribe. In Germany, as Erdartischocke, Erdbirne or Indianerknolle increasingly gaining importance for nutrition.

Due to the high inulin content Topinambur is particularly interesting for diabetics and as a diet food. Inulin has a positive effect on the intestinal flora and is metabolically regulating.
