Jerusalem artichoke (Helianthus tuberosus) is related to the sunflower. The plant was in the 17th century. discovered in North America by an Indian tribe. In Germany, as Erdartischocke, Erdbirne or Indianerknolle increasingly gaining importance for nutrition.

Due to the high inulin content Topinambur is particularly interesting for diabetics and as a diet food. Inulin has a positive effect on the intestinal flora and is metabolically regulating.

Jerusalem artichoke has many valuable vitamins, is rich in potassium, iron, vitamin B1, niacin, fiber and carbohydrates. The Jerusalem artichokes can be eaten raw, cooked, roasted and cooked. Properly storedit is stable for 5 weeks without any problems.

Topinamburheu moored to trees in different places in winter, thanks to its high protein content is a delicacy for red and roe deer.
